The chuck of a beef cow is around the lower neck and upper shoulder of the animal. Many good steaks and roasts come from this portion of the animal. Cuts from the chuck can be an inch thick or more and are known for being flavorful and well-marbled. At the store cuts from the chuck are normally less expensive compared to other cuts.
